This coffee stopped us in our tracks, truly. It is a masterful representation of high-quality green meeting intentional processing. Julian is a young coffee entrepreneur who grows, buys and processes differentiated coffees in southern Huila. He specializes in post-harvest processing and continuously works toward standardized protocols to offer repeatability of high-quality profiles; add that to his training as a professional cupper and the result is an extensive command of everything it takes to produce great coffee - from seed to cup.
This Typica was fermented in-cherry for 50 hours, then depulped and fermented for an additional 50 hours. It was then fully washed and dried on raised beds to optimal moisture. The result is a dazzling array of fruit and clarified sweetness.
