Kolla Bolcha, Lot 5 - Ethiopia

First fresh-crop Ethiopia!

We secured this coffee on our sourcing trip to Ethiopia, back in January.  Sourced through our friends at Red Fox, this lot in particular stood out for its juiciness and clarity.  Produced by one of the more coveted stations in western Ethiopia - Kolla Bolcha - the seeds are mechanically separated from the fruit and mucilage (a technological luxury), soaked overnight in fiberglass tanks, and finally dried on raised beds to optimal moisture.  The result is a coffee that is pristinely clean and acutely defined.
