Nicknamed “The King of Guji,” Ture Waji knows the land and people of Guji about as well as anyone. This is one of two coffees that bought from Ture this year, and though both were among our favorites of the year, this one sat ever-so-slightly above.
During harvest, only fully-ripe cherries are selected, then pulped using a Penagos eco-pulper; the coffee is then fermented in water for 12 hours before being moved to raised beds for drying.
