Cesar found his way to coffee through his wife, Margarita, whose family has produced coffee in Huila for generations. The couple now operates Finca La Florida, in San Adolfo - a farm which is almost entirely comprised of Pink Bourbon trees. This particular lot was hand-selected for ripeness, then floated to remove defects; the cherries are then aerobically fermented in tanks, before being moved to raised beds to dry to a moisture of 10-11%.
