We were connected with Edgar’s coffee through this year Copa de Oro cuppings, and though it didn’t make the final table, it stood out to us for its impressive, layered sweetness. The dynamic of this coffee changes, from prominent wild berry while warm, to hibiscus and lingering vanilla as it cools. This varietal was initially thought to be a mutation of Bourbon, but has since been identified as an Ethiopian Landrace that made its way to Colombia.
