The second place coffee from the Central Division of this year’s Copa de Oro, Eder’s washed Pink Bourbon somehow tastes like SL28 from Kenya. Boasting syrupy, purple fruit, this coffee is truly stunning, and unlike any of its counterparts. Cherries are hand-picked for ripeness, immediately filtered through a sieve to remove debris, floated for defects, dry-fermented (in-cherry) overnight, depulped and fermented for an additional 80-110 hours, and finally rinsed and dried on raised beds (inside a greenhouse) for 15-20 days.
