The Chito Community is a group of 55 producers in the extreme southeast of Ecuador - right by the Peruvian border. Historically, these producers have not had the means or access to sell their coffees on the specialty market, but since 2021 Cafexporto has invested in the way of quality seeds, education and milling. After harvest, the cherries are cleaned with low-pressure water, manually sorted for defects and then transferred to temperature-controlled rooms, where they are turned constantly for 20-30 days.
