The area of Chelchele is known for producing exceptional coffees. The region's altitude, soil, and climate create ideal growing conditions, and the community's expertise in coffee farming has solidified its reputation as a coffee-growing hub. This selection underwent “Honey” processing, which involves removing the outer cherry after harvest, but leaving in-tact the inner mucilage layer during drying; striking somewhat of a midpoint between the increased fruit sweetness of a natural and the clarity of a washed.
