Nicknamed “The King of Guji,” Ture Waji knows the land and people of Guji about as well as anyone. This is a coffee that we connected with during our trip to Ethiopia in January. It’s only very recently that a washed coffee was available from Ture, and Bookkisa was the first. Only fully-ripe cherries are selected, then pulped using a Penagos eco-pulper; the coffee is then fermented in water for 12 hours before being moved to raised beds for drying.
